Fondant won’t turn white and stiffen up?
I made a more candy-oriented fondant recipie.
It uses 1 1/2 tablespoons of light corn syrup, 2 cups of sugar, and 1 1/2 cups of water.
You boil it, cover it for 1 minute, heat it to 240F, pour it on a platter, and let it cool.
After that you’re supposed to beat itwith a woden spoon (While it’s still on the plate) vigorously for ten minutes or until it turns white and stiff.
I did that.
No white, no stiff.
So I put it in a bowl and have been going at it with the hand mixer…it’s white-ish, but not stiff.
Should I keep going on with what I’m doing or what?
Are there any stiffening agents I could use?
Anything?

And if it hasn’t been boiled enough, do I start over…er…what?
240 is exactly the temp you needed for candy fondant. You need to let it cool enough so you can lay the back of your hand on it and it’s warm. By you being able to use a hand mixer or even a spoon on it means it still to warm, it should be the consistency of soft taffy and that’s what you’re looking for. Usually that fondant is cooled on marble. Take a chunk of your fondant and “pull” it between your fingers like taffy and watch the color, keep pulling………… we’ll wait, keep pulling somemore………..more……..it’s getting whiter, you’re getting the Idea, this is not a hurried process. BTW, you may want, from time to time, anything that touches that fondant needs to be cold, put the fondant down stick your fingers in Ice water and pull somemore. For the rest you can use your cold hands.
